Broccoli Slaw













Broccoli Slaw
  • 2 heads organic broccoli (stems and flowers)
  • 1 small organic carrot
  • 1/4 small red onion, finely chopped
  • 1/4 c dried organic cranberries
  • 1/4 c olive oil
  • 1/3 c apple cider vinegar
  • 1-2 Tbsp raw honey
  • 1 Tbsp sea vegetables
  • toasted sesame seeds for garnish
  • black pepper

Trim broccoli and cut it into large chunks. Put through a food processor using the grating blade, or use a mandoline to cut them into thin slices. The stems and leaves can be used along with the tops. Grate the carrot at the same time.

Toss the grated vegetables with the Sea veggies, red onion and cranberries in a large bowl. Meanwhile, whisk the dressing ingredients (olive oil, apple cider vinegar, raw honey and pepper) and pour over the salad. Garnish with toasted sesame seeds.

Baja Cheese Burrito with Taco Nut Meat

This recipe is from Jennifer Cornbleet's book Raw Food Made Easy. You can find more about it here. I really enjoy this recipe... Makes me Love love love Raw food even more! Takes some prep.. but it is totally worth it!

Taco Nut Meat

1/2 cup Almonds (dry)
1/2 cup Walnuts (dry)
1TBSP Ground Cumin
1TBSP Ground Coriander
1/3 cup extra virgin Olive Oil
2/3 tsp Sea Salt
1 tsp Nama Shoyu or Bragg Liquid Aminos

*Process almonds and walnuts into a powder. (I use a coffee grinder) Place nut meal into a mixing bowl. Add cumin, coriander, olive oil, salt, and Braggs aminos and mix well. Set aside.

Baja Cheese

2 cups Brazil nuts ( I use almond because they are more alkaline)
Juice of 2 lemons, about 4 TBSP
3 cloves of garlic
1/2 habanero or jalapeno pepper
1 bunch of cilantro leaves
1/2 cup water, as needed

* Blend nuts, lemon juice, garlic, jalapeno, and cilantro until smooth.. adding only as much water as needed to create a smooth cheese.


Salsa


2 tomatoes
1 1/2
tsp fresh cilantro
1 1/2 tsp minced red onlin
1/2 tps fresh lime juice
1/4 tsp crushed garlic (1/2 clove)
1/4 tsp minced jalapeno, (cayenne to taste).
salt to taste

Burrito

Use lettuce leaves as a tortilla
Filling: 2 cups spinach leaves
2 TBSP extra virgin Olive Oil
Pinch of sea salt
1 batch of Baja cheese
1 batch of taco Nut meat
1 batch of Salsa

*Toss spinach leaves with olive oil and sea salt. Put the leaves into the bottom of each lettuce cup. Top with Baja cheese, Taco nut meat,and salsa..
